come fall come

{because not all posts have to be about babies, right?!}

Finally, some crisp fall-ish days in Charlotte!  This is my favorite time of the year – love the weather, love the leaves and colors, and love the food, especially baked goods – anything apple, pumpkin, or spice puts me in a great mood!  After my mom & I went for a walk yesterday afternoon (it was gorgeous outside!), massive double stroller in tow, of course, I put the boys down for a nap and felt like baking.  I got these scones in the oven just in time for my wonderful husband to try when he got home from work.   Thought I’d share the recipe if anyone else is in a fall baking mood too!

Apple Cinnamon Scones

  • 2 cups flour
  • 1/4 – 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold
  • 1 cup apple, shredded (2 medium)
  • 1/2 cup milk
  • 1 or 2 T cinnamon
  • milk, for topping the scones
  • cinnamon + sugar to sprinkle on top
  1. Preheat oven to 425 degrees.
  2. Measure flour, sugar, b. powder, soda, cinnamon, and salt into large bowl. Cut in butter until crumbly.
  3. Add apple and milk. Stir to form soft dough.
  4. Turn out onto lightly floured board; knead gently 8 to 10 times. Pat into two 6-inch circles. Place on greased baking sheet.
  5. Brush tops with milk; sprinkle with sugar and cinnamon. Score each top into six pie-shaped wedges.
  6. Bake for 15-20 minutes or until browned and risen. Serve with warm butter and marmalade (or apple butter!)

2 months old

Today our precious baby boys are 2 months old.  And we’re celebrating at HOME, not at the hospital.  They are doing so well and really thriving – we’re loving life with them!

AT TWO MONTHS {or about 1 week, adjusted age}

You both:

  • Are gaining weight quickly – you’ve been released from home health visits and your nurse was so impressed!
  • Are great sleepers – you’re giving us 4+ hour stretches at night
  • Have been really good babies at home so far – generally happy and content!
  • Love laying on your daddy’s chest – it’s your favorite spot and will settle you down in an instant

Cullen Wayne… you:

  • weigh 8 lbs, 10 oz (as of Wed. the 23rd)
  • are very mellow and laidback – an easygoing little guy
  • can lift your head and turn it from side to side when on your belly (but you’d rather just go to sleep!)
  • have dark brown hair and blue-grey eyes

Lane Davis… you:

  • weigh 7 lbs, 9 oz (as of Wed. the 23rd)
  • are feisty and happy – already starting to give us smiles, but you definitely let us know when you need something!
  • can lift your head way up when on your belly, and today you rolled over from front to back for the first time (three tries in a row)!
  • have strawberry blonde hair and blue eyes

Meeting Great Grandpa!

Today was a big day for the boys – they got to meet their Great Grandpa Pullen.  He flew up from Florida to spend a week with our family and meet his new grandsons!  It was really special and we’re so glad they finally got to meet each other.  We sure do miss my Grandma, though – it’s definitely very bittersweet without her.  I know she would’ve loved these little boys SO much.  Thankfully, though, we know that one day we’ll all be together again – praise the Lord.

My grandparents’ small group in Florida has been praying for us and these boys ever since they found out about them (I found out I was pregnant a week after we got back from my grandma’s funeral, where we met all of their wonderful, godly friends and stayed with the McCormicks – who we know read this blog – so these pictures are for all of you!) so they’ve been very excited for this meeting!  Thank you all so much for caring for us in such a special way.

due date? what due date?

Well, today would have been my 40-week due date… if I had been pregnant with one baby.  Instead, I already have 2 almost 8-week olds!  Even though they are nearly 2 months old, by their “adjusted age” they are just now newborns, at least when it comes down to when they should meet developmental milestones.  But these boys are overacheivers, obviously… 😉

Happy due date, Cullen & Lane!  We’re so glad you’re already in our lives.

little boys in PJ’s

My mom has always said she loves little boys in their pajamas.  I would have to agree – and as I’m finding out, even better is your own sweet baby boys in their PJ’s, curled up on their daddy’s chest:

Brian & Jennifer brought over a meal for us last night – breakfast for dinner! (a favorite of mine…lots of great Zaepfel family memories too!)  In honor of this, we all donned our jammies for the evening.  So fun! 🙂

P.S. These boys are getting so big!  The home health nurse came again today – Cullen is 7 lbs, 14 oz. and Lane is 6 lbs, 13 oz!  They are chunking up fast and we love it.

pricey preemies

pediatrician co-pay x2 (co-pays don’t seem so bad until you double them every time!)…$50

opthamologist co-pay x2, once every 2 weeks until their premature eyes are fully developed (hopefully soon!)…. $120

medical bills for an emergency c-section, 1 week stay in the hospital for mom, NICU stays for 38 days x2….$300,000+ (thank you Lord for insurance – if we had to pay that amount I would’ve had a heart attack!!!)

let’s not even talk about the diapers we’re plowing through (BIG thanks to my friends who gave diapers at a diaper shower to give us a head start!)…

2 healthy, thriving, precious baby boys… truly, priceless.
